Chania eats across many registers: fish by the working harbour, careful new kitchens in old rooms, grill houses, bakeries and mountain tavernas. The best plan is not to ask one restaurant to do all of them.
For fish, look west
Nea Chora remains a working harbour. Walk the waterfront, look at what is on ice and choose a table with a short conversation between kitchen and boat. Order simply: fish, boiled greens, potatoes, lemon.
Inside the old quarter
The strongest Old Town kitchens use the setting without being trapped by it. Look for concise menus, Cretan cheeses named by producer and dishes that change when courgette flowers or stamnagathi disappear from market.
Reserve an outside table in July and August; in quieter months, keep your evening flexible.
What to order at least once
Try boureki made with courgette, potato and mizithra; lamb with stamnagathi when it is in season; dakos only when the tomato is worth it; and kalitsounia that arrive warm rather than from a display case.
